FRESH Pecorino cheese
Fresh Pecorino Made exclusively with pasteurized sheep's milk, lactic ferments, rennet, and salt, it is a versatile and delicious cheese, known for its soft texture and delicate flavor.
Characteristics of Pasteurized Fresh Pecorino
Fresh Pecorino is distinguished by its short maturation period (usually less than 30 days, sometimes just 10-15 days), which preserves its freshness and softness.
Ingredients and Production
Basic Ingredients: The essential ingredients are: pasteurized sheep's milk, rennet, salt, and lactic acid bacteria. Pasteurization of the milk ensures food safety while preserving the natural flavors.
Paste: The paste is soft and tender, sometimes almost spreadable, white or straw-white in color. It may have a few small, sparse holes.
Rind: The rind is generally thin and smooth, light in color (white or straw yellow). It is often treated superficially to protect it and maintain its moisture.
Flavor: The flavor is sweet, delicate, and aromatic, with a hint of fresh milk and a mild, if not overly pronounced, saltiness typical of young cheeses. It is not as sharp as the aged versions.
How to Serve Fresh Pecorino
Fresh Pecorino is an excellent table cheese, ideal for appetizers and platters, but also as an ingredient in cooking.
Temperature and Presentation
Serving Temperature: It's essential to remove it from the refrigerator about 30 minutes before serving. When served at room temperature, the cheese releases its aromas and softness to the fullest.
Cut: It can be cut into slices, wedges, or cubes. Very soft versions (such as "Morbidone") can be served almost like a spreadable cheese.
Classic and Delicious Pairings
The sweet, milky flavor of fresh Pecorino pairs beautifully with a variety of flavors, creating pleasant contrasts:
With Fruit and Honey: The most classic and popular combination.
Fresh Fruit: Pears, sweet grapes, ripe figs.
Honey: Chestnut, wildflower, or acacia honey, which enhance the sweetness of the cheese.
Jams and Compotes: Ideal with fig compotes, citrus marmalades or berry jams.
In Appetizers and Platters:
Served on a charcuterie board (such as prosciutto or salami) and accompanied by fresh or cooked vegetables.
Perfect with a drizzle of extra virgin olive oil and a grind of black pepper on a slice of rustic bread or carasau bread.
In the Kitchen:
As a filling in fresh pasta (such as ravioli or culurgiones Sardinians).
Cooked: Grilled or pan-fried for a tasty side dish.
Added to fresh salads.
